Sous Chef

London, Regent's Park, Salary up to £40,000 per annum

Our client is requiring an experienced Sous Chef for their property in Regent's Park, London.

Duties to include:

  • Liaise with the Principal, Secretary/PA, Residence House Manager and the Head Chef regarding menus
  • Preparation, cooking and presentation of all food requirements for the family, guests and staff
  • Check storage and stock levels of all food items and advise Head Chef of any relevant purchases or short-falls
  • Deputise for the Head Chef in his/her absence      
  • Menu planning for all meals/events, using seasonal supplies wherever possible
  • Keep all the Kitchen areas in a safe, well-maintained and hygienic condition
  • Assist with the Staff Management function in the Kitchen
  • Liaise with the Residence Accountant in connection with costing, stock levels, food expenses, payment of wages and administration of the petty cash fund
  • Record and discuss all injuries and/or illnesses which may affect the day-to-day operation of the Kitchen
  • Occasionally required to assist at other local properties
  • Perform any other duties, as and when required, to ensure the smooth operation of the Residence

The residence does a lot of entertaining so the candidate will need to be very flexible with their time.

Salary up to £40,000 depending on experience.

Essential qualifications and experience required:

  • City & Guilds Level 3 NVQ in:
  • Professional Cookery (Preparation & Cooking)
  • Professional Cookery (Patisserie & Confectionery)
  • At least five years' experience in a busy, high quality dining hotel, restaurant or private service kitchen
